1 can chickpeas (1.5 cups cooked), rinsed and mashed
2 eggs, beaten
1/2 onion (once I added sautéed red onion, I have also substituted a handful of shredded carrot)
1/4 cup fresh parsley, chopped (or 1 Tbsp dried)
1/2 cup breadcrumbs
1/4 cup shredded cheese
1/2 tsp black pepper
1/2 tsp salt
drizzle hot sauce (I recommend Sriracha)
a bit of pesto (optional, I added about 1 Tbsp)
-Preheat oven to 350. Line baking sheet with foil and grease foil.
-Combine all inredients (should not see any whole chickpeas).
-Form into meatballs or patties, bake 20-25 min, until browned on outside, or barbecue (I think they taste better barbecued). NOTE: Better to undercook than overcook as they quickly dry out.
-NOTE: I have eaten these both as “meat”balls in marinara sauce and on burgers and sandwiches – both are awesome.
